The Rook launches Party in my Plants for Sustainability Week

There is a party in The Rook’s plants and everyone’s invited!

Sydney cocktail bar The Rook has joined forces with Olmeca Altos Tequila to raise awareness about environmental sustainability in the hospitality industry with Party in My Plants, planting a tree for each drink purchased during Sustainability Week, which conveniently kicks off today on World Margarita Day!

For every Olmeca Altos Tequila cocktail purchased between February 22 and March 2, The Rook will donate $1 to the One Tree Planted initiative. The charity is committed to reforesting areas in North America, Latin America, Asia and Africa.

Choices include the “Strawberry Tequila Thyme” with strawberry infused tequila, thyme infused vermouth, maraschino liqueur, lime, grapefruit & strawberry syrup, and the “Bitter Sweet Smoke” with the bold flavours of tequila, chocolate bitters, agave, applewood smoked salt.

For the hospo crews, The Rook will have on display a number of sustainable bar techniques that can be easily adopted by any venue. Think home grown herbs in your cocktails, a list bursting with seasonal ingredients, washable cotton coasters and wheat drinking straws to name a few.

You’ll find The Rook above Sydney’s York St, with views of the skyline and the stars through the atrium-style retractable rooftop.
